The third is Historic Cairo, the UNESCO 1979 quarter wrapping Khan el-Khalili, Al-Azhar Mosque, the Citadel of Saladin and the Muhammad Ali Mosque. I budgeted four full days as the minimum to see Cairo without rushing, and that is the itinerary I recommend if you are flying in once.
